Cake Decorating - Sugar Flowers


An all-levels course teaching step-by-step techniques for making wired sugar flowers and foliage for cake decoration.
About this course
Participants learn to shape flower paste into a seasonal focal flower, complementary leaves and greenery, using techniques for forming petals, flower centres and veined foliage. The course covers colouring with edible dusts and gels, applying glazes, and taping and arranging finished elements into a floral spray for a cake. Sample flowers may include clematis, alstroemeria, rose, orchid, filler blossoms and hydrangea petals. Teaching is step by step, with regular tutor feedback, opportunities to exchange ideas and individual targets set at an appropriate level.
