About this course

The class begins with a demonstration of the evening’s dishes, techniques and organisational advice before participants prepare the menu themselves with guidance from the chefs. The chicken menu includes an avocado and crab timbale, chicken ballotine with seasonal vegetables, and lemon possets with raspberry coulis and rosemary thins. Teaching covers knife work, preparation, planning dishes ahead, flavour balance and presentation. The session concludes with participants sitting down to eat the meal they have prepared.
