About this course

The class begins with demonstrations covering the dishes and associated cooking techniques, followed by a guided cooking session. Participants prepare a Christmas menu featuring smoked salmon mousse or a beetroot alternative, steak or cauliflower steak with accompaniments, and mince pies with brandy butter. The session also addresses knife skills, flavour balance, presentation, preparation and organising dishes ahead of entertaining. Chefs are available to provide guidance during the cooking, after which participants eat the meal they have prepared.
