About this course

The class centres on a three-course menu featuring twice-baked soufflé with porcini sauce, duck breast with celeriac mash and vegetables, and sticky toffee pudding with vanilla ice cream. A chef demonstration introduces the dishes, techniques and organisational advice before participants prepare the meal themselves with guidance available throughout. The session covers planning and preparation for entertaining, including work that can be done in advance, as well as flavour balance, presentation and knife skills. Participants then eat the completed dinner together.
