About this course
The class explores culinary traditions from the Middle East and North Africa through dishes including lamb kofta, shakshuka, hummus and baba ganoush. Teaching focuses on transferable techniques, including safe and effective knife use, preparing ground-meat mixtures that hold their shape, and balancing acidic flavours. Learners also make harissa paste, hummus and baba ganoush from scratch while developing dishes associated with Arabic, Levantine and North African cooking.
