Festive Afternoon Tea Masterclass

About this course

Participants create a selection of savoury and sweet afternoon tea items, including bridge rolls, stilton sablés, mincemeat scones, mini gâteaux pithivier and clementine and champagne posset. The course also covers mixed jumble berry jam and apple and plum chutney. Instruction focuses on the techniques used at each stage, including enriched dough preparation, laminated pastry work, pastry-making skills, and the fundamentals of making jams and chutneys.
