About this course
Participants prepare traditional Gambian food in a family-style kitchen, with the group working together across several recipes. Each person chooses one dish to focus on, while also moving between tasks and helping with other preparations. The menu may include benachin, chicken yassa, domoda, Gambian salad, panketti, ngalakh and wonjo. The class concludes with a sit-down meal shared with the chef, facilitator and volunteers.

- Prepare a selected traditional Gambian dish as part of a shared cooking session.
- Contribute to the preparation of additional Gambian recipes alongside the group.
- Work through a range of Gambian dishes, including savoury food, dessert and a traditional drink.

The course is labelled All Levels and is organised for participants with different levels of cooking experience. It suits learners who are comfortable taking part in a shared, social kitchen environment, focusing on one dish while contributing to other group preparations.
- The class uses a family-style format in which everyone works together.
- Participants are expected to move between kitchen tasks and help with more than one dish.

- The menu is subject to change.
- The listed menu includes chicken and is described as vegetarian-friendly, with six of the seven listed dishes being meat-free.
- Listed allergens include celery, eggs, gluten (wheat), milk, mustard, peanuts, soya and sulphites.
- Dietary requirements should be communicated to the team in advance. Ingredients will not be substituted to accommodate dietary needs.
