About this course
The day uses morning and afternoon demonstrations to introduce more advanced dishes and techniques, followed by participant-led cooking. Learners prepare their own lunch and further dishes, with guidance available throughout the session. Content focuses on understanding how food works rather than following recipes mechanically, including ways to adapt skills and presentation approaches across different recipes. Depending on the day’s menu, topics may include knife skills, correcting dishes, fish and seafood, international flavours, dietary requirements, leftovers, preparation and kitchen organisation.

This course is intended for intermediate learners who are already confident making the elements covered in the provider’s Basic Cooking Days without a recipe book. Day 1 forms part of a structured five-day progression, and the full-day format suits participants able to remain focused and engaged in a busy kitchen environment.
