About this course

The class explores a selection of Italian dishes through demonstrations and hands-on cooking. Participants work at their own station to prepare beef cheek ragù, pizza fritta with tomato sauce, potato gnocchi, braised squid, a grilled apricot salad and gianduja with fresh fruit. The teaching chef demonstrates the methods before participants recreate the dishes, including braising, dough preparation and salad assembly. The finished food is served at the chef’s table, giving the session a combined cooking and dining format.

What you'll learn

• Prepare a beef cheek ragù using braising techniques
• Make pizza fritta and a sweet tomato sauce
• Produce homemade potato gnocchi using traditional Roman-inspired techniques
• Prepare braised squid with breadcrumb, pecorino and garlic stuffing
• Combine grilled fruit, mozzarella, peppercorns and prosciutto in a composed salad
• Make gianduja and serve it with fresh fruit
