About this course
Participants make four miniature French tartelettes while exploring how pastry can be paired with or infused by sparkling tea. The workshop combines guided baking with a tasting of Saicho’s Jasmine, Darjeeling, Hojicha and Osmanthus teas. While the tartelettes bake, a curated selection of seasonal canapés provides further pairings. The tasting considers balance, texture, aroma and flavour, alongside the role of tea as an ingredient in food.
