About this course
The class introduces essential kitchen-knife knowledge before moving into food preparation. Learners break down a whole chicken, use different cuts in saltimbocca and teriyaki, practise chopping and slicing vegetables for a stir-fry, and prepare and fillet round and flat fish before cooking plaice. Teaching chefs demonstrate each technique, after which learners recreate the dishes at their own stations. The session combines demonstrations with individual cooking and concludes with the prepared food being eaten at the chef’s table or packed to take away.

Listed as suitable for all levels, the course is structured around demonstrations followed by active participation at an individual workstation. Learners take part in the cooking rather than attending as spectators.
