About this course
Participants prepare vegetarian Thai dishes while learning core techniques used in Thai cooking. The class covers cutting vegetables with a Chinese cleaver, grinding herbs and spices with a pestle and mortar, and making, preparing and cooking curry paste from scratch. Teaching also introduces ingredients including lemongrass, galangal, kaffir lime leaves and Thai basil, with attention to combining them for balanced flavours. Each learner has an individual chopping board and preparation area, while hob cooking is carried out in pairs.
